Lemon curd is SO versatile! Used as filling in cakes, as a spread on biscuits or bread, on ice cream, or straight off the spoon. This delicious, naturally gluten-free lemon curd will make you want to find new ways to eat it!
This recipe makes about 1 C worth so feel free to double if you need more. We have a few simple tips to make sure your lemon curd is SUPER creamy too. Plus, you just need 4 ingredients.
Ingredients
- 2 Lemons (1-1/2 TBSP lemon zest and 1/2 C lemon juice)
- 1/3 C Sugar
- 2 TBSP Unsalted Butter
- 1 Egg + 1 Egg Yolk
5 Simple Steps
Step 1: Zest and juice 2 lemons, removing any seeds from the juice. Measure 1/2 C lemon juice and 1-1/2 TBSP lemon zest into a medium bowl. Add 1/3 C sugar and whisk together.
Step 2: In a small bowl, whisk together the egg and yolk until slightly bubbly. Add to the lemon mixture and whisk until fully combined.
Step 3: Add mixture to a small saucepan and whisk constantly over medium heat until it comes to a rolling boil. Continue to whisk for 1-2 more minutes until it thickens to almost a gel-like consistency.
Step 4: Remove from heat and whisk in 2 TBSP unsalted butter. Pour lemon curd through a fine mesh strainer into a bowl to ensure any clumps or over-cooked bits are removed. This step is KEY to a super creamy lemon curd.
Step 5: Cover the lemon curd directly with plastic wrap (touching the top of the lemon curd) and refrigerate for at least 1 hour before enjoying!
