Flourless Peanut Butter Chocolate Chip Cookies

With back to school, we're always looking for easy treats that our kids can help make and that don't require crazy ingredients! These FLOURLESS Peanut Butter Chocolate Chip Cookies check all of our boxes. And how could they not be a favorite, they're completely flourless!

In 5 simple steps with ONLY 5 ingredients (yes, only 5!), these will become a staple in your house. Plus, they're the kind of cookie that is just as good days after, if you still have any left by then. 

All you need:

  • 1-3/4 C Brown Sugar
  • 2 Large Eggs
  • 1-3/4 C (16oz) Creamy Peanut Butter
  • 1/2 tsp Vanilla Extract
  • 1 C Chocolate Chips

That's literally it. Weird, right? But trust us, these will make you, and anyone else who tries them, go WOW! 

Step 1: Preheat oven to 350º. Before baking, check the brown sugar for clumps. If there are any, try to break them up before using. Whisk together the eggs and brown sugar until smooth and small bubbles appear. Then add the vanilla.

Step 2: Making sure to get all the peanut butter out of its container, whisk in to the mixture until completely incorporated and no streaks of peanut butter remain.

Step 3: With a spatula, mix in the chocolate chips until evenly incorporated throughout the dough. If you want your cookies to really pop, use milk chocolate chips! Semi-sweet or dark chocolate also work great, really any type of chocolate chip you have laying around. (We actually used both milk chocolate and semi-sweet in this batch which was a great balance!)

Or, you can omit the chocolate chips altogether and just roll dough balls in sugar! If you do this, chill your dough before you roll in sugar to place on the cookie sheet as it will be easier to work with. 

Step 4: Drop heaping tablespoons of cookie dough onto a cookie sheet, shaping into a ball as possible. Space dough 2-3” apart (~12-16 cookies per sheet). Place cookie sheet in fridge to chill dough for at least 15 minutes before baking.

Step 5: Bake on the middle rack for 14-18 minutes and cookies appear darker around edges and slightly crackled on top. Let sit on baking sheet for 2-3 minutes before transferring to a wire rack to cool completely and then enjoy!


They are literally THAT easy and we promise they'll quickly become a cookie jar favorite by everyone.
